Pumpkin Soup


A great warming soup that is creamy and delicious.

Enjoy this great soup, that will warm you up. 

I make a big batch and freeze in small serves. You can serve with some lovely bread.

Ingredients 
2kg butternut pumpkin
1 medium red onion
3 teaspoons crushed garlic
2 tablespoons cooking oil
3 vegetable stock oxo cubes
1 liter boiling water
1 teaspoon ground nutmeg
Ground pepper and salt to taste

Method

  1. Peel and cut the pumpkin into small cubes.
  2. Finely chop onion. 
  3. In a large pot fry the onion in oil. When brown add garlic.
  4. Add pumpkin and mix. 
  5. Mix stock and water in a bowl. Add to pot and cook for 30-45 minutes or until pumpkin is soft.
  6. Add nutmeg, salt, and pepper. 
  7. With a stick blender or blender, blend until smooth and creamy.
  8. Serve or spoon into containers to freeze.
