Creamy Cauliflower Broccoli Pasta Bake
I love this easy warm dinner. It's cheap and filling, so great if you are on a budget and have lots of hungry people to feed.
This yummy dinner is great. I like making it ahead of time. So do everything up to step 7. Place in the fridge then when you are ready to eat, just complete step 8. Yum!
Serves 2 generously.
Ingredients
2 cups dried pasta
1 teaspoon salt
3 cups Cauliflower, chopped into florets
1 cup Broccoli, chopped into florets
2 tablespoon butter
4 tablespoons white flour
½ teaspoon garlic
1 teaspoon mustard powder
2 cups milk
1½ cups grated Edam cheese
1 spring onion, finely chopped
Method
- In a large pot of boiling water add dried pasta and salt and cook as directed (usually 10 minutes). Once cooked, drain and set aside.
- In a microwave proof bowl add cauliflower, cover with hot water a cook in the microwave until just soft.
- Drain cauliflower and set aside, add broccoli to the microwave proof bowl, cover with hot water a cook in the microwave until just soft. Drain and set aside.
- In a medium pot melt butter, slowly add flour and mix.
- Add garlic and mustard powder, and start slowly adding milk and stirring making a creamy sauce. I recommend using a hand whisk.
- Add cheese and stir.
- In an oven proof dish add pasta, broccoli, cauliflower, spring onion, and stir. Then pour over sauce.
- Bake in the oven at 180ºC or 360ºF fan bake until golden brown and bubbling.
