Easy Chicken Noodle Stir Fry


So tasty and makes fab leftovers! Easy, quick, get stuck in!


Ingredients
500g chicken breast, chopped into cubes
2½ tablespoons hoisin sauce
100ml soy sauce
2 teaspoons grated ginger
1 teaspoon crushed garlic
2 tablespoons lime juice
1 teaspoon sesame oil
1½-2 teaspoons chili seasoning
2 teaspoons Chinese five spice
1 carrot, peeled and chopped into thin slices
1 cup broccoli, chopped into small florets
½ green capsicum, chopped into thin slices
½ red capsicum, chopped into thin slices
1 spring onion, chopped
1 small can of chopped pineapple
2 tablespoons grapes seed oil (or cooking oil of your choice)
½ cup roasted cashew nuts
2 tablespoons corn flour mixed with cold water
250g dried udon noodles
Sesame seeds for garnish


Method
  1. Cover chicken in hoisin and soy sauce, ginger, garlic, lime juice, sesame oil, chili seasoning and five spice, mix and set aside.
  2. Prepare vegetables.
  3. In a hot wok add oil and chicken, brown.
  4. Put upon noodles on to cook in a pot of boiling water.
  5. Add carrot and broccoli into wok, mix well. Add a some hot water to soften the vegetables.
  6. Add remaining vegetables, pineapple, cashews. Add corn flour mix to thicken sauce.
  7. Drain udon noodles, place in a bowl and top with chicken and vegetable mix and sprinkle with sesame seeds.
