Cranberry, Cashew & Cacao Energy Balls
These small sweet treats and a great little addition to the lunch box or a nice little something for after dinner.
With the addition of the nuts they have a good kick of plant protein, and the dates are a great source of iron. So they are a great snack for people doing a lot of exercise, vegans, vegetarians, pregnant women, really, anyone!
This mixture makes 14 small balls.
Ingredients
1/2 cup cashews
1 teaspoon of cacao
1 cup dates
1/2 cup of cranberries
Dried shredded coconut (to roll the balls in)
Method
- In a food processor chop nuts until in small fine pieces (leave chunky if you like it that way but we like them smooth).
- Add cacao and mix.
- Add dates and cranberries and mix until a smooth paste forms (this may take a little while).
- Take small portion and roll into balls between your hands.
- Roll in coconut and place on a plate.
- Put in the fridge for 1-2 hours and these are ready to eat. These are best left in the fridge to keep fresh but go great in a lunch box.
