Cranberry, Cashew & Cacao Energy Balls


These small sweet treats and a great little addition to the lunch box or a nice little something for after dinner.

With the addition of the nuts they have a good kick of plant protein, and the dates are a great source of iron. So they are a great snack for people doing a lot of exercise, vegans, vegetarians, pregnant women, really, anyone!

This mixture makes 14 small balls.

Ingredients 
1/2 cup cashews
1 teaspoon of cacao
1 cup dates
1/2 cup of cranberries 
Dried shredded coconut (to roll the balls in)

Method
  1. In a food processor chop nuts until in small fine pieces (leave chunky if you like it that way but we like them smooth).
  2. Add cacao and mix.
  3. Add dates and cranberries and mix until a smooth paste forms (this may take a little while).
  4. Take small portion and roll into balls between your hands.
  5. Roll in coconut and place on a plate.
  6. Put in the fridge for 1-2 hours and these are ready to eat. These are best left in the fridge to keep fresh but go great in a lunch box.
