Blueberry and Apple Almond Crumble
I love this easy quick recipe. It great if you want a little treat after dinner but don’t have heaps of time.
It’s a good way to get extra fruit in while feeling like you have had a treat.
If I don’t have ground almonds at home I just grind whole almonds in my food processor. By grinding the whole almond you are including all the nutrients in the skin of the almond, unlike shop bought ones.

Ingredients
3 apples
150g frozen blueberries
50g butter
½ cup ground almonds
2 tablespoons white sugar
1 tablespoon brown sugar
6 tablespoons plain flour or 6 tablespoons of rolled oats
Slithered almonds to top

Method
- Preheat oven to 180°C fan bake.
- Peel and chop apples into small cubes and put in an ovenproof dish with blueberries and mix.
- In a medium microwave-proof bowl soften butter (don’t stress if some of it melts). Add sugar and ground almonds and mash with a fork.
- Add flour a tablespoon at a time, continuing with the mashing and mixing of the fork to get a crumbly mixture. You may need to add more or less flour to get the crumble mix just right.
- Spread over the top of the fruit and top with slithered almonds.
- Bake in the oven for 15-20 minutes. You know it is ready when the fruit mixture is bubbling and the topping is golden brown.
- Serve warm, with or without ice-cream or cream.
Fantastic weeknight dessert. Super easy, delicious - everyone loved it. I served it with french vanilla ice cream, I also added rolled oats to the topping.
