Banana Pikelets


I love these little Pikelets. 

It's a great way to add fruit to your morning breakfast treat and use up those banana's no one in the house wants to eat. 

You can make a batch and reheat the next day in the microwave or oven, or even eat cold. They make a lovely lunch box addition.

Ingredients
1½ cups flour
1 teaspoon baking powder
1 teaspoon baking soda
¼ teaspoon salt
½ teaspoon cinnamon (optional)
¾ cup milk
½ cup sugar
1 egg
1 banana


Method

  1. Sieve the flour, baking powder, baking soda, salt and cinnamon into a large bowl.
  2. Add milk into dry ingredients in the large bowl.
  3. Beat together sugar and egg and add to the other ingredients
  4. Mash the banana and combine in with the other ingredients.
