Banana Pikelets
I love these little Pikelets.
It's a great way to add fruit to your morning breakfast treat and use up those banana's no one in the house wants to eat.
You can make a batch and reheat the next day in the microwave or oven, or even eat cold. They make a lovely lunch box addition.

Ingredients
1½ cups flour
1 teaspoon baking powder
1 teaspoon baking soda
¼ teaspoon salt
½ teaspoon cinnamon (optional)
¾ cup milk
½ cup sugar
1 egg
1 banana
Method
- Sieve the flour, baking powder, baking soda, salt and cinnamon into a large bowl.
- Add milk into dry ingredients in the large bowl.
- Beat together sugar and egg and add to the other ingredients
- Mash the banana and combine in with the other ingredients.
