Mexican Inspired Rice
This easy yummy Mexican Inspired Rice is a great lunch box meal or an easy dinner. This amount services 4. I use brown rice to keep us fuller for longer. However, you can use whatever rice you like.
I often cook this while I am making something else. It's easy to make, the brown rice is the thing that takes the longest to cook.
Ingredients
1 cup brown rice
½ red onion, finely chopped
1 tablespoon grapeseed oil
1 teaspoon garlic, crushed
1 can black beans, washed and drained
1 can whole corn kernels, washed and drained
3 teaspoons paprika
½ teaspoon dried oregano
¼ teaspoon chili seasoning
4 dashes Worcestershire sauce (leave out if for vegan or vegetarian)
Salt and pepper to taste
Boiling water
Fresh coriander (topping - optional)
Sour cream (topping - leave out if for vegan or vegetarian)
Method
- Cook brown rice in salted boiling water for 25 minutes.
- While the rice is cooking, brown onion in oil in a medium frying pan. Add garlic and lightly brown. If these start to brown a little too fast you can add some water to help it soften, without adding any extra oil.
- Once the onion and garlic are soft, add the black beans and corn and mix.
- Then add the herbs and spices, salt and pepper and the Worcestershire sauce and mix. Then add water to start forming a sauce.
- Let the bean mixture cook. Only add a little water at a time so you have a little sauce but it is not too watery.
- Once the 25 minutes are up, take the rice off the heat and let sit in the water for a further 5 minute.
- Drain the rice and serve with bean mix, coriander, and sour cream.
