Mexican Inspired Rice



This easy yummy Mexican Inspired Rice is a great lunch box meal or an easy dinner. This amount services 4. I use brown rice to keep us fuller for longer. However, you can use whatever rice you like.

I often cook this while I am making something else. It's easy to make, the brown rice is the thing that takes the longest to cook.

Ingredients
1 cup brown rice
½ red onion, finely chopped
1 tablespoon grapeseed oil
1 teaspoon garlic, crushed
1 can black beans, washed and drained
1 can whole corn kernels, washed and drained
3 teaspoons paprika
½ teaspoon dried oregano
¼ teaspoon chili seasoning
4 dashes Worcestershire sauce (leave out if for vegan or vegetarian)
Salt and pepper to taste
Boiling water
Fresh coriander (topping - optional)
Sour cream (topping - leave out if for vegan or vegetarian)

Method
  1. Cook brown rice in salted boiling water for 25 minutes.
  2. While the rice is cooking, brown onion in oil in a medium frying pan. Add garlic and lightly brown. If these start to brown a little too fast you can add some water to help it soften, without adding any extra oil.
  3. Once the onion and garlic are soft, add the black beans and corn and mix.
  4. Then add the herbs and spices, salt and pepper and the Worcestershire sauce and mix. Then add water to start forming a sauce.
  5. Let the bean mixture cook. Only add a little water at a time so you have a little sauce but it is not too watery.
  6. Once the 25 minutes are up, take the rice off the heat and let sit in the water for a further 5 minute. 
  7. Drain the rice and serve with bean mix, coriander, and sour cream.
